  5. 6 tiras morrón rojo asados sin semillas y s/ cáscaras picado
  6. 1 cucharadita Orégano seco
  7. 11/2 cucharada Salsa catsup
  8. 1 diente ajo picado muy chico
  9. 1 zapallito de tronco en brunoise media
  10. Sal lo necesario
  11. 750 cc agua
  12. 1 caldo en cubo de carne
  13. 1 cucharadita Cúrcuma
  14. 250 gramos champiñones en lata, escurridos

  1. Preparamos todos los ingredientes, lavamos, pelamos y cortamos los vegetales. (Como mencionamos anteriormente)
  2. En un recipiente ponemos el agua, el cubo de caldo y las zanahorias en brunoise, dejamos que las zanahorias se tiernizen, no agregamos sal, el caldo ya tiene. La quinoa la ponemos en una olla, con la cúrcuma y agregamos 500cc del caldo, dejamos 20 minutos a fuego medio, luego tapamos la olla y dejamos que se termine la cocción, reservamos.

En un woock, colocamos aceite, cuando esta caliente agregamos las cebollas, el ajo, el morrón rojo asado y las zanahorias (que tenemos en el caldo), dejamos a fuego medio y sofreímos bien durante unos 7 minutos. Luego de ese tiempo agregamos, los champiñones, la salsa catsup, salpimentamos y ponemos el orégano, agregamos un poco del caldo sobrante y cocinamos a fuego bajo.
  4. Dejamos que los vegetales se cocinen, pero que no se pasen, ahí le añadimos el zapallito de tronco y dejamos hasta que este esté al dente. Apagamos el fuego y reservamos.
  5. Ni bien vemos que la quinoa está en su punto, (armada, pero tierna), prendemos el fuego, calentamos la preparación del woock y agregamos la quinoa, mezclamos bien y comprobamos el sabor, si falta condimentos agregamos. Apagamos el fuego y dejamos reposar unos 4 minutos.
  6. Luego de los 4 minutos de reposo, decoramos con los tallos (esto al gusto) de la CEBOLLA DE VERDEO, y servimos. ** como sugerencia se puede utilizar puerro en vez de cebolla Blanca, queda más suave... para quien no quiere dos tipos de cebolla y se puede decorar con hojas de perejil.
