- Volvemos a poner los trozos de pollo y un poco de fondo de ave y las hojas de laurel. Tapamos y dejamos cocer hasta que esté tierno. Es mejor añadir poco caldo e ir mirando si hace falta añadir. Se ha de conseguir una textura de salsa un poco espesa.
- En una sartén aparte salteamos ligeramente y a fuego fuerte los champiñones en cuartos.
- Cuando falten unos minutos para que el pollo esté, añadimos los champiñones y las aceitunas a la cazuela.
- Dejamos reposar fuera del fuego unos minutos y listo!!
